At once fruity, spicy and savory, this combination of flavors will compliment the Terrazas Torrontés Reserva flawlessly. Make up the soup well beforehand so that it is nice and cold, contrasting with the warm trout. This would make an ideal dish for dinner guests as all the elements can be made up in advance, allowing you to socialize with your friends, the point of dinner parties, after all.

Ingredients :
 
2 whole trout or 4 trout fillets
Salt and pepper to taste
50 g of butter
10 basil leaves, chopped
15 g pistachios, chopped
10 g dried apricots, chopped
10 g raisins
30 cc of olive oil
 
For the melon and ginger soup :
100 g melon (about a quarter of a cantaloupe, skin, seeds and interior removed)
100 ml of Torrontés
1 tsp grated ginger
1 tsp honey Dash of salt
A few drops of Tabasco
 
Garnish :
pea shoots and balsamic vinegar reduction
 
 
Preparation :
 
For the soup, chop the melon and place it and the rest of the ingredients in a blender or food processor and process until smooth. Taste for seasoning and then put in a refrigerator until cold.
 
Preheat oven to 180°C / 350°F. If using whole trout, clean and remove bones, separate the fillets. Set aside. Mix the butter with the dried fruits and chopped basil. Cut four large pieces of tin foil. Drizzle a little of the oil on each of the pieces and use to wrap the trout fillets. Bake for five minutes, then remove from oven and open the packets. Add a spoonful of butter with dried fruits to each fillet and cook for another two minutes.

Presentation :
 
On a rectangular plate, serve the trout covered with the butter; on the other end of the plate, place a shot with the fresh melon soup. Decorate with shoots and balsamic vinegar reduction.
