The tart fruitiness and deep chocolate notes of this dessert make perfect foil for the Terrazas Reserva Malbec. It would make an elegant summer dessert and is ideal in that you can make all the elements in advance and plate up in a few minutes.

Ingredients :
 
Red berry flan :
250 g white chocolate
100 g sugar
200 ml water
100 g red berry yogurt
100 g red berries (strawberries, currants, raspberries, etc.)
4 eggs
50 g cream
 
Parfait : 
100 g bittersweet chocolate
20 g unsweetened cocoa
100 g sugar
200 ml water
6 egg yolks
250 g cream
Pink pepper, to taste
 
 
 
 
Garnish :
Chocolate sauce
Strawberry or raspberry jam
Chocolate shards
 
Preparation :
 
To make the flan, first line a 20 x 30 cm baking tray with tin foil and spray with vegetable oil. Preheat the oven to 180°C / 350°F. Melt the chocolate with the cream over a low heat and reserve. Put the sugar and water in a small pan and heat until the mixture caramelizes. The temperature should be 120°C / 250°F. In the meantime, beat the eggs until they foamy. Gradually add to the syrup whisking vigorously. Add the melted chocolate and cream, the yogurt and the red berries. Pour mixture into prepared pan. Bake for approximately 15 minutes, until set. Cool and reserve until ready to serve.
 
To make the parfait, begin by putting the sugar, pepper and water in a small pan and heating until the mixture caramelizes. The temperature should be 120°C / 250°F. In the meantime, beat the egg yolks until they are pale and frothy and gradually add the syrup. Continue to beat until the mixture cools. Whip the cream until it forms soft peaks and fold in the cocoa. Combine the chocolate mixture with the egg mixture and the whipped cream mixture. Pour into a loaf pan lined with cling film and leave in the freezer for at least 4 hours.

Presentation :
 
On a rectangular plate, place a portion of cake covered with berry jam and place a scoop of parfait on the other end. Decorate with chocolate sauce, pink pepper and chocolate shards.
