The word pinzimini is taken from pinzomonio, an Italian starter featuring raw, finely sliced vegetables, olive oil and bread. This restaurant’s version is high quality olive oil impregnated with sea salt and fresh herbs, served on crunchy bread. Squisito.

Before landing at the Westin Santa Fe, Daniel Téllez was responsible for creating menus for banquets of up to 3,800 people at Banquetes Eduardo Kohlmann. He was also at eateries Intervalo and the Romanos Maccaroni Grill in Mexico, and opened two restaurants within the Brick Hotel (Brasserie La Moderna and Lonchería Olivia) in the Roma colony, inside Mexico City.

Courses in Mediterranean Cooking and Chocolate Technology at the Scuola Di Arte Culinaria Cordon Bleu in Perugia, Italy, special sessions in Genoa, and a stint at the PR Cookery School in Palma de Mallorca, Spain have all stood him in good steed as Daniel blends culinary and cultural influences at Pinzimini.
