Who first inspired or pushed you to cook, Manuel?  Was it someone in your family?

I was inspired by myself. My mother does not cook well, so my brothers and I prepared the meals.

That’s unusual! As a chef, would you say you are the best cook in your family?

Yes, I am definitely the best cook. Is it possible to say that humbly?! That means when we have a family get-together, I have to prepare the food every time. I am not allowed to opt-out.

When you’re not working, what is your favorite thing to cook for yourself?

When I have to cook for myself, I raid the kitchen and then go for a fusion of things that I find in the kitchen. Sometimes it’s great, sometimes it’s…..creative.

I have always wondered whether chefs watch cooking shows on cable like the rest of us.

Yes, we do. Or I do, rather. I usually watch Latin American programs, which always amaze me with the diversity of ingredients that can be used. On the other hand with European programs, I watch to learn more about that elegant design and style of cooking.

Any experiences that stand out from your first real cooking jobs?

Once at my first work, my boss promised me that he was going to pay me at the end of the year – can you imagine? - but that never ended up happening…I literally worked a year for free!

Do chefs eat a proper meal before starting? Or do you eat at the end of a night spent cooking?

After the event, I enjoy a “picada”, a plate of hams and cheeses, and a glass of wine with my co-workers.

Last question: favorite Terrazas wine?

My favorite wine is the Single Vineyard Cabernet Sauvignon. It’s kind of spicy!
