You create menus alongside Manuel Debandi now.  Any experiences stand out from way back when?

In my first job at Las Leñas, a resort ski located at Malargue- Mendoza, a supplier brought 5 lambs in that needed to be deboned and I didn`t have any idea of how to do it.

When you’re not working, what is your favorite thing to cook for yourself?

A pizza with rocket & ham. Very simple, but very tasty.

And your desert island ingredient?

Chocolate. Chocolate, chocolate, chocolate! I am a chocolate lover. I like it in any shape, any form, at any meal, so I use it for every creation, even savory.

The best spices come from India & the best meat comes from our country, Argentina.

In your opinion, what makes Argentinian culture/food stand out?

The fact that we highlight the intensity of the flavors is what is most special about Argentinean/Mendocinean food.  Argentinean cuisine is not very sophisticated but it really highlights the quality of the raw material.

Favorite Terrazas wine?

I really like the Syrah variety, but, as a chef, I will choose the Reserva Malbec because it makes an ideal pairing with main courses as well as with desserts. Besides having great structure, the Reserva Malbec is refined and well-rounded.
